A stock is going to give you a a better performance evaluation of the gun just on stability alone.
Do preformance with a stock for evaluation of gun then put back to pistol and test.
Is the dove tail removable?

yes. ive mounted the red dot directly. i made the dove tail plate, but didnt use it.

I know this is an old post now but what pressure did you have it fulled up to for those last numbers?

It would have been around 1800 - 2000 psi

After being inspired by the latest posts from other members of their builds I started finishing off my 25 cal pistol build.

The gun fires, but has no way to mount a sight or scope. I have a small red dot for it, but needed to make a mounting plate for it as I cocked up the one that came with it by getting complacent with my accuracy when drilling holes.

At first I milled a shallow channel in the aluminium plate then hand filed the angle. This was ok but substandard, so I used a countersink bit to create the angle.  This worked really well, so I will redo the part again. 

I was really pleased with the fit.

Next thing will be to drill and countersink the 2 holes to fix to the breech block.

Looking good pauly. Just wondering if your going to make a separate plate for mounting plate would it be worth making the center narrower at the width of a scope mount, then angle grinding at the bottom of said recess so a dovetail scope mount can be used. Same for front except probably could be just scope mount width.
Maybe place for ghost ring at back, assuming you can put a post of some sort on barrel.
Should put up your work to air valve on crosman you recently did.
Being that looks like a 13xx trigger platform, are you going to alter the trigger sears?
Ive been toying with the idea of (but haven't done yet) of taking a mm off the face of the sear that ingauges the hammer, creating a step where the last mm or two of travel has a slight click into place as the hammer "drops" into place for the final part of travel. Sort of a hair trigger set for what is otherwise a reasonably unfeeling trigger system.

I have a dovetail cutter here i brought many years ago for cutting groves in for mounts. Happy to send it to you to use if you need it.

I had thought about putting a dovetail on, but didn't want the sights too high, so I got the small red dot sight with its mounting plate to keep it low profile and I had to make this plate after cocking up the original one.
